12 wonton wrappers
1 cup frozen diced sweet potato
1/4 cup ricotta cheese
1oz shredded cheddar cheese
half a small onion diced
2tbs. parmesan cheese
salt, pepper, oregano
Cook the sweet potatoes and onions in a skillet with a little olive oil until tender. Mix the veggies with the cheeses and spices. Put the wonton wrappers in a greased muffin pan. Fill the wrappers with the filling. Bake at 350 for 12 minutes.
